Arugula pesto

In a food processor combine arugula, garlic, lemon juice, parmesan cheese, and pine nuts. Salt + pepper to taste.

5 oz bag of arugula
1 lemon, juiced
2 garlic cloves
1/4 c parmesan cheese
1/4 c pine nuts or walnuts
1/4 c olive oil
salt + pepper
I make pesto with arugula instead of basil. It's cheaper and available year round! This also tastes great with walnuts, which are half the price of pine nuts. This pesto is amazing on eggs, toast, roasted vegetables, and meat.
PRO TIP
Pesto freezes beautifully! Freeze it in your ice cube tray and then transfer to a freezer bag for convenient individual servings.
