Almond butter cups

VEGAN / GLUTEN-FREE / MAKES: 12 / COST: $12

INGREDIENTS

3/4 c coconut oil, melted

1/2 c cocoa powder

2-4 tbl agave or maple syrup

3/4 c of almond butter

pinch sea salt  or sliced almonds for topping

paper muffin cups

DIRECTIONS

Prep in 30 minutes, chill for an hour.

Combine melted coconut oil with cocoa powder and sweetener. Spoon a small amount of chocolate mixture into muffin cups.

Roll almond butter bits between your fingers and place in muffin cups. Cover with remaining chocolate mixture.

Top with sea salt or sliced almonds and chill before serving.

Oh man are these good! I prefer them to be less sweet and topped with lots of sliced almonds so they are a crunchy protein treat. If you'd like to make these cheaper, regular old peanut works just fine.
