Kale and sausage frittata

INGREDIENTS

1 c chicken apple sausage, sliced

1 spring onion, sliced

1 c dino kale, stemmed

6 eggs

splash of cream

salt and pepper

parmesan cheese

DIRECTIONS

Takes about 30 minutes.

Pre-heat the broiler. If you don't have a broiler, pre-heat the oven as hot as it can go (at least 450 degrees). Whisk eggs with a splash of cream and a generous amount of salt and pepper.

In a really hot cast iron pan (oven-safe pan) sauté the the sausage and spring onions in a pad of butter for a few minutes. Then add in the kale. Once softened, pour in the egg mixture. Stirring frequently with a rubber spatula until the egg begins to set in the bottom of the pan but is runny on the top.

Sprinkle parmesan cheese on top and put in the oven to bake until fluffy and the cheese starts to brown. Slice and serve.

Frittata is great for a crowd and can be made with pretty much any type of veggie and cheese. Frittata is even good for dinner! I served this with arugula pesto, a side of arugula salad, and some simple sour dough toast with local honey.
