Chia pudding

VEGAN / GLUTEN-FREE / SERVES: 4 / COST PER SERVING: $3

INGREDIENTS

1/4 c chia seeds

1 c almond milk

1 tsp vanilla extract

1 tbl honey

fresh fruit

sliced almonds

DIRECTIONS

7 minutes to prep, then soak overnight.

Regular milk and cream also work well. Chia seed to milk ratio must be exact to get the right pudding consistency.

Mix wet ingredients and pour over chia seeds. Stir thoroughly to get a consistent pudding. Soak in an airtight container overnight.

Serve with fresh fruit and sliced almonds.

Yes, it looks like frog eggs but I swear it tastes like vanilla pudding. I love sitting on my patio in the mornings taking in the sun to wake up and eating this simple breakfast. The higher the fat content of your milk (sometimes I use half & half!) the longer you’ll feel full. Also, fat doesn’t make you fat. Low-fat foods are full of sugar and sugar definitely makes you fat.
